PCOS Friendly Meals From Around The World Day Ten: Austria
Wiener schnitzel means "Viennese cutlet" in German, and it is one of Austria's most traditional and representative dishes. So much so, in fact, that its definition is fiercely protected by Austrian law. It must be made of veal; when made with any other type of meat, it cannot technically be called Wiener schnitzel. I could not find veal for this meal and ended up using chicken. This will be one serving size.

Ingredients:
1 Chicken Breast
1 Egg
1 Cup Cassava Flour
2 Table spoons Parmesan Cheese
Salt
Pepper
Paprika
Garlic Powder
Oregano
Instructions:

Place chicken breast in bag and pound until 1/4 inch thickness
Place flour and spices in one bowl and beat one egg in the other bowl.
Dip Chicken in flour first then egg then flour then egg then flower till the whole chicken is covered with flour evenly
Make sure olive oil is hot before placing the breaded chicken breast.
Cook till golden brown or until the inside of chicken reaches 165 Degrees Fahrenheit ( 74 degrees Celsius)
Let chicken sit for a couple mins
