PCOS Meal Ideas
Ingredients:
kale
Green Goddess Trader Joes Dressing or any high protein yogurt dressing
Sweet potato hunks
Olive oil
Lentils
Diced Cherry Tomatoes
Crumbled feta
Bacon
Sweet Small Bell Peppers
hummus vinaigrette:
1/4 cup garlic hummus (if using classic hummus, add some garlic powder for flavor)
4 tbsp olive oil
1 tbsp water
Instructions:
Massaged kale in either dressings
Oven roasted sweet potato hunks (roasted with olive oil and sea salt in the oven at 400F for 25 min)
Steamed lentils
Diced cherry tomatoes
Crumbled feta
Whisk the Hummus Vinaigrette ingredients until creamy (adjust water amount based on your desired consistency)
