PCOS Friendly Meals From Around The World Day Eight: Armenia
If you are new to Balela, it is a chickpea and bean salad filled with lots of fresh herbs and a tangy dressing. It's my super tasty! There are many different versions of Balela, this one just happens to be my favorite I have found. This is also a fantastic salad to meal prep because there's ingredients get soggy, and the flavors more infused everyday!
Makes 6-8 servings
2 cans garbanzo beans, drained and rinsed
2 cans black beans, drained and rinsed
1 cup cherry tomatoes, halved
1 bunch mint, finely chopped
3/4 cup italian parsley, finely chopped
1/4 cup dill, finely chopped
1/2 red onion, finely diced
Dressing
1/2 cup olive oil
1 lemon, juiced
3 tb apple cider vinegar
1/2 jalapeño
2 cloves garlic
1 tb sumac
1 tsp salt
1 tsp pepper
Instructions:
Clean, prep and chop all your veggies and add them to a bowl.
Next, prepare the dressing.
Add all of the ingredients to a separate bowl. Taste and adjust seasonings as desired.
Pour over to the other bowl.
