PCOS Friendly Meals From Around The World Day Eight: Armenia


If you are new to Balela, it is a chickpea and bean salad filled with lots of fresh herbs and a tangy dressing. It's my super tasty! There are many different versions of Balela, this one just happens to be my favorite I have found. This is also a fantastic salad to meal prep because there's ingredients get soggy, and the flavors more infused everyday!


Makes 6-8 servings

  • 2 cans garbanzo beans, drained and rinsed

  • 2 cans black beans, drained and rinsed

  • 1 cup cherry tomatoes, halved

  • 1 bunch mint, finely chopped

  • 3/4 cup italian parsley, finely chopped



  • 1/4 cup dill, finely chopped

  • 1/2 red onion, finely diced

  • Dressing

  • 1/2 cup olive oil

  • 1 lemon, juiced

  • 3 tb apple cider vinegar

  • 1/2 jalapeño

  • 2 cloves garlic

  • 1 tb sumac

  • 1 tsp salt

  • 1 tsp pepper


Instructions:

  1. Clean, prep and chop all your veggies and add them to a bowl.

  2. Next, prepare the dressing.

  3. Add all of the ingredients to a separate bowl. Taste and adjust seasonings as desired.

  4. Pour over to the other bowl.
